3 Healthy Fall-Inspired Snacks That Are Great For Kids

Fall is a favorite of many for a multitude of reasons. Not only is the weather great and the nature views magnificent, but it’s a season for great food and beverages, too! Spoil your little ones with delicious treats best enjoyed this season – make these healthy fall-inspired snacks that they will absolutely love!

Pumpkin Spice Granola

What you need:

  • 1 1/2 cups rolled oats
  • 1/2 cup dried cranberries
  • 1/4 cup uncooked quinoa, rinsed well
  • 1/4 cup chopped pecans
  • 1/4 cup ground flaxseeds
  • 1/4 cup pepitas
  • 1/4 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1 teaspoon pumpkin spice
  • 1teaspoon canola or coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Pinch of kosher salt

Spread the rolled oats and the quinoa in a baking pan lined with parchment paper. Bake in a pre-heated oven (325F), stirring once, until toasted, about 10 mins. Place the toasted mixture in a bowl and add the cranberries, pecans, flaxseeds and pepitas.

In a separate bowl, stir together the pumpkin puree, honey, pumpkin spice, oil, vanilla extract, cinnamon and salt. Pour over the oats and spread the mixture onto a baking sheet. Bake for 20 minutes in the oven (300F) or until golden.

Crispy Cinnamon Apple Chips

What you need:

  • Apples, cored and sliced
  • Cinnamon powder

Lightly sprinkle the apple slices with cinnamon powder and arrange the slices in a baking sheet lined with parchment paper. Bake in the oven (set at the lowest setting, leaving the door slightly open to lower heat inside) until dry and toasty but not hard and brittle.

Serve with a cold glass of milk and some pumpkin spice cookies!

Applesauce Fruit Bites

What you need:

  • 2 cups applesauce
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • Coconut oil

Combine the applesauce with the cinnamon and nutmeg. Prepare a baking tray lined with parchment paper, lightly brushing the parchment paper with coconut oil. Pour the applesauce mixture into the tray, tilting it to spread the mixture evenly onto the tray (ideally about 1/4 inch thick).

Bake in the oven at the lowest setting until the mixture is not sticky anymore but still pliable. Allow to cool completely and cut into strips or fun shapes for added enjoyment.
