Three Low-Carb French Toast Recipes for Dieters

You’re a French toast lover but you always think it’s fattening so you deny yourself of your favorite food. You actually don’t need to give up on your French toast in an effort to lose weight. Try these low-carb French toast ideas that can be a great breakfast treat to make ahead not just on Easter morning but on holiday brunches as well.

You can even get inspired by making your own low-carb topping. Blend a tablespoonful of sugar-free jam or jelly in two tablespoons of water and heat mixture until boiling, or be different by using fresh fruits. I personally enjoy sugar-free fruit syrups or preserves, I even try nuts sometimes. Here are the recipes.

Egg Free French Toast

Ingredients

  • 2 slices whole-grain bread, cut into rectangular squares
  • 1/2 cup milk, or soy milk
  • 1 tablespoon cornstarch
  • 2 tablespoons Splenda
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons butter, or margarine
  • 1 pinch salt

In a shallow bowl, mix together all ingredients except butter and bread, mixing well until cornstarch has thoroughly dissolved. Dip bread slices one at a time coating both sides with the mixture. Set aside. Preheat a griddle or pan to just above medium heat. Melt butter on the griddle and place bread on heated surface. Cook each side to a light golden brown. Serve with a good cup of coffee.

Diet French Toast

Ingredients

  • 2 slices of whole-wheat bread, cut into 4 squares
  • 1/4 cup liquid egg substitute
  • 3 tablespoons low-fat milk
  • 1/4 teaspoons vanilla
  • 1 pinch cinnamon or nutmeg
  • 1 pinch salt, optional

Directions

In a large medium bowl, combine egg substitute, milk, vanilla, cinnamon and salt. Set aside. Bring a lightly greased large skillet to just above medium heat. Dip each of the bread pieces into the egg mixture flipping each piece so both sides are drenched with the mixture. Quickly put the pieces of bread in the skillet, placing as many in one batch. Cook and brown each slice for about 2 to 3 minutes. Grease skillet with a thin cooking oil between batch. Serve with vanilla or your favorite yogurt topping.

Low-Carb French Tortilla Toast

Ingredients

  • 2 whole-wheat or low-carb tortillas, cut into squares
  • 2 whole eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon water
  • 2 tablespoons Splenda, or any sugar alternative
  • 1 teaspoon butter, to be used for frying

Ingredients

In a shallow bowl, beat eggs with water until frothy. Slowly mix the cinnamon and sugar. Continue beating for a minute. Heat a skillet just above medium heat and melt butter. While skillet is heating up, dip the bread or tortillas in egg mixture flipping each side to fully coat with the mixture. Start frying for 1 to 2 minutes each piece of bread until both sides are golden brown. Serve with butter, or a low-carb syrup.
