Tasty Indoor Shrimp BBQ

What you need:

  • 1/2 kg. jumbo shrimp, shell on, deveined
  • 1 tablespoon vegetable oil
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar
  • 1 tablespoon ketchup
  • 1 teaspoon chilli powder
  • 1 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground allspice
  • Lemon wedges

Place the shrimp in a bowl and add all seasonings and spices to the bowl – the lemon juice, brown sugar, ketchup, chilli powder, ground cumin, salt, black pepper, cayenne pepper and ground allspice. Add the olive oil to the bowl and stir until all ingredients are well-combined and shrimp is covered in mixture. Allow to sit for 15 minutes.

Cook marinated shrimp on a pre-heated indoor grill over medium-high heat, about 4-5 minutes per side or until cooked through. Transfer to a serving plate and serve with lemon wedges as a garnish.

What you need:

Vegetables

  • 3 golden beets, thinly sliced
  • 3 carrots, sliced lengthwise
  • 1 white onion, sliced
  • 1 cup sliced zucchini
  • 1/2 cup thinly sliced yam

Seasoning

  • 1 clove garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh rosemary
  • 2 teaspoons balsamic vinegar
  • Salt and freshly ground black pepper

In a large bowl, prepare the seasoning by combining the minced garlic, olive oil, rosemary, balsamic vinegar, salt and black pepper. Stir until ingredients are well-combined. When ready, add the beets, carrots, onion, zucchini and yam to the bowl and toss in the seasoning.

Let the vegetables sit in the seasoning for at least 30 minutes for a flavour boost. Pre-heat your indoor grill and cook the vegetables for 10 minutes, turning each once. You can use a grill pan if your vegetables are falling through the grill grates. The veggies should be cooked through and have nice grill marks. Best served with grilled meat.
